Since fall weather is finally upon us, I have been having the itch to make a hearty homemade soup. Today I am sharing with you the best Broccoli Cheddar Soup recipe. This soup really fills you up and is perfect for a fall night when you need something to warm you up.

Ingredients:
- 1 small onion
- 1/2 cup butter (1 stick)
- 1/2 cup flour
- 5 cups half and half
- 5 cups veggie broth
- 2 carrots
- 2 small red potatoes
- 4 broccoli crowns
- 16 oz shredded cheddar cheese
Directions:
- Caramelize onion in some butter and put aside.
- Place stick of butter in pan and melt, then add flour and whisk together for 5 minutes
- Slowly add in the half and half while whisking.
- Add in veggie broth.
- Let simmer for 20 minutes.
- While the base is simmering chop up your veggies – carrots, red potatoes, and broccoli crowns.
- Add in chopped veggies & caramelized onions.
- Season with salt & pepper.
- Let simmer on low for 20 minutes.
- Add in the shredded cheddar cheese.
- Mix on low until cheese is melted.
