Grateful.Thankful. Blessed.

This time of year always gives people the time to reflect on so many things. I find myself thinking how grateful I am throughout the year, but there is something about November that inspires us all to be vocal about what we are thankful for.

i’m grateful for my job. when your employed you don’t think about a time where that may not always be the case. after losing my job in September it has made me more grateful for the opportunity to be employed now.

i’m grateful for the opportunity to travel. so many people don’t have the opportunities to visit the places they love and I am so glad that I do. traveling is such a passion of mine and I can’t wait for this next year and all the traveling we will do!

i’m grateful for my fiancé.  i know this one is obvious. but he is the best man i have ever ever had the chance to know.  he is funny, he is annoying, he is such a hard worker, he is loving, and the list can go on and on. i truly feel like he was placed on this earth for me. i CANNOT wait for our wedding day! #334days

i’m grateful for Lola. my fur baby may be last on this list but she has such huge piece of my heart. this girl really has no idea how much she has blessed our lives the past year and a half. she truly is our best friend. she knows how to make you giggle when you need it the most, she has the most energetic temperament I have seen, she loves everyone she meets and she is the best cuddle buddy around.

This year has been such a whirlwind for Bobby & I with the engagement and so many other wonderful memories that we have been able to experience! The biggest blessings in my life are all the people I am lucky to have in it. My parents, my aunt & uncles and cousins to my soon to be in laws, and of course my best friends – the family I get to chose for myself – there aren’t enough words in the dictionary to describe how much I love and appreciate them all!

we are heading to NYC Wednesday morning and I am so excited! I hope you have a wonderful thanksgiving!

Weekend Recap

The last weekend of my favorite month. You have gone by too quickly October! This weekend we celebrated Halloween with some friends, did a deep clean and relaxed.

Friday night we did some last minute shopping for Bobby’s costume – and by last minute I mean we had to buy the whole thing. He didn’t decide what he wanted to be until Friday night. After going to savers and wal-mart we headed to my favorite place to eat Mediterranean.

Saturday I went for a walk with a good friend and our pups, picked up Nichole from cheer, and then I napped before we headed out to the annual Mylod halloween party.

English Muffin & a Wet Bandit 😉

Sunday we got up at the crack of dawn to get our grocery shopping done. Not only were we awake but the pats were on and the forecast was calling for some horrible weather so we wanted to beat the rush. Good thing we did, we got to the grocery store at 7:30 and let me tell you it was already busy enough where legit every checkout had a line.

When we got home we vegged all day and did some cleaning around the house. Lola had a blast playing outside while the weather was nice….I wonder what she did…

Wasn’t much on the agenda for this weekend and thankfully it looks like this weekend coming up will be a lazy one too. Have a great week!

Weekend Recap

Happy Tuesday Friends!

This weekend was a great start to my October! Now that I am at my new job, I am fortunate to start my weekend on Fridays at 3:30pm – the earliest i’ve ever gotten out of work. I was so excited for the weekend to start, because I knew fun things were happening!

Friday: I went home to play a bit with Lola girl since Bobby is outta town for the weekend. I had plans to go out to eat for dinner with my mom & dad at our favorite Fish & Chips place Ye Olde English – so getting some of Lola’s energy out before I had to leave again was necessary. My gram, cousin and aunt ended up joining us for dinner! I love family time and to make things better Nichole came back to spend the night with me so I wasn’t lonely!

Saturday: THE DAY I HAVE BEEN LOOKING FORWARD TO SINCE I GOT ENGAGED. Some of the most important ladies in my life came with me to find my wedding dress! It was something that I was so excited to do, but also dreading because I have not lost as much weight as I wanted to before the appointment.

As soon as we got to the store I immediately felt special. They had a sign out front that had my name on it, welcoming me to my appointment. How freaking cute is that?!? I had heard such great things about Ve’Lace Bridal and I am so glad I chose to go there first.

Once I got into the store I checked in, and advised what style I liked and showed them a few pictures of what I liked. Well it’s true what they say that you may not actually like the things you see in the magazines. I had such a strong opinion on what I wanted to try on – but thankfully I had the most amazing bridal associate helping me. Big Shoutout to Shadia for helping me feel the most beautiful I have EVER felt.

Shadia was unbelievable in really opening my eyes to different style dresses that I thought I didn’t want. I told her what I liked but was also open to try on anything since this was my first time ever trying on bridal gowns! Little did I know I’d fall completely in love with I think the 10th dress I tried on. I had loved it so much – but there were still some things that I wanted to change, so I tried on other dresses but I couldn’t stop comparing everyone to that one. I spoke with Shadia in the dressing room about my thoughts and she assured me that the few changes I wanted could easily be made. Thats when I stepped back out in that dress and let the ladies know it was the one.

Once she matched the veil to my dress, the tears could not stop! I knew I had found my dream dress and I could not be happier!! I’m so excited to bring my girls back to shop for their bridesmaids dresses there and hope they have the same great experience that I did (I have no doubt that they will!)

After a wonderful appointment we headed to lunch. It was so nice to talk about all things wedding related, further kids names, and just have a fun girls morning and afternoon.

Sunday: It was such a crappy day – legit overcast and rain ALL day. But I went sunflower picking with my mom and finished getting our engagement picture outfits complete. We have them a week from Sunday! I am so excited!

Monday: Happy Columbus Day! We spent the day doing one of our bucket list items. Visiting Clyde’s Cider Mill. We had heard great things about their hard cider & wine so we ventured to Mystic CT with the family. It was a fun day. After hanging around for a bit at the cider mill watching their process of making the cider we headed to Mystic Pizza.

I had the absolute best weekend and hope you did too! Hopefully this week flies by since its only a 4 day work week.

The Best Broccoli Cheddar Soup

Since fall weather is finally upon us, I have been having the itch to make a hearty homemade soup. Today I am sharing with you the best Broccoli Cheddar Soup recipe. This soup really fills you up and is perfect for a fall night when you need something to warm you up.

  • 2 small red potatoes
  • 4 broccoli crowns
  • 16 oz shredded cheddar cheese

  1. Caramelize onion in some butter and put aside.
  2. Place stick of butter in pan and melt, then add flour and whisk together for 5 minutes
  3. Slowly add in the half and half while whisking.
  4. Add in veggie broth.
  5. Let simmer for 20 minutes.
  6. While the base is simmering chop up your veggies – carrots, red potatoes, and broccoli crowns.
  7. Add in chopped veggies & caramelized onions.
  8. Season with salt & pepper.
  9. Let simmer on low for 20 minutes.
  10. Add in the shredded cheddar cheese.
  11. Mix on low until cheese is melted.
